📝 Ingredient notes

Garlic butter ingredients

Vegan Unsalted Butter: This is the creamy base of our vegan garlic butter, so pick a good one. I like the Flora blocks here in the U.K. Look for brands with minimal ingredients and a high-fat content for the most buttery flavour Do make sure you go for a block, not the stuff in a tub, it wont work as well if you don’t!

Roasted Garlic: Roasting a whole head of garlic mellows its pungency, transforming it into a sweet, caramelised delight. It adds a depth of flavour that complements the raw garlic beautifully.

Raw Garlic: We’re adding a couple of raw cloves for that signature garlicky punch. Garlic is packed with flavour so a little goes a long way with the raw stuff

Dried Garlic: A pinch of dried garlic intensifies the garlic flavour and adds another layer of complexity. It’s optional but highly recommended for the ultimate garlic experience.

Fresh Parsley: This vibrant herb adds a pop of freshness and a subtle peppery note. Parsley is a good source of vitamins A and C, plus it provides a beautiful visual contrast to the buttery garlic base. If you’re out of parsley, chives could make an excellent substitute.

🥣 How to make the best vegan garlic butter

  1. Roast the Garlic: Preheat your oven to 200°C (400°F). Slice the top off a garlic head, drizzle with olive oil, wrap in foil, and roast for 30 minutes or until softened. While the garlic roasts, set the vegan butter out to soften at room temperature and mince the other two cloves of garlic.
  1. Cool Completely: Allow the roasted garlic to cool fully at room temperature. This prevents the butter from melting excessively when combined and makes it easier to handle.
  1. Prep the Parsley: While the garlic cools, finely chop the fresh parsley leaves, discarding the stems.

  1. Combine and Season: Once the garlic is cool enough to handle, squeeze the softened cloves into a mixing bowl. Add the vegan butter, raw garlic (finely minced or grated), dried garlic, and chopped parsley. Mix thoroughly with a spoon until well combined. Taste the mixture and add salt, adjusting the amount to enhance the other flavours.
  1. Shape and Chill: Lay a sheet of baking (parchment) paper on your countertop. Spoon the garlic butter mixture onto the paper and shape it into a log. Roll up the paper tightly, twisting the ends to secure the log. Refrigerate for several hours, or until the garlic butter is solid again.
  1. Enjoy! Your homemade vegan garlic butter is now ready to elevate your culinary creations. Slice it into rounds for garlic bread, toss it with pasta, or simply spread it on toast. The possibilities are endless!

💡 Tips for getting it right!

  • Roast Garlic Low and Slow: Roasting garlic at a lower temperature for a longer time ensures a sweeter, more caramelised flavour.
  • Don’t Skip the Salt: A pinch of salt enhances all the flavours in this vegan garlic butter.
  • Customise to Taste: Adjust the amount of raw garlic and parsley to suit your personal preferences.

🎨 Potential variations

  • Spicy Garlic Butter: Add a pinch of red pepper flakes or a sprinkle of chilli powder for a fiery kick. I love using Aleppo flakes in this, their citrusy subtle heat work amazingly.
  • Herb-Infused Garlic Butter: Experiment with different herbs like rosemary, thyme, or basil for unique flavour combinations.
